Winter Spiced Red Cabbage

Ingredients
  

  • 1 small to medium red cabbage
  • 1 medium red onion
  • 250 ml red wine
  • 25 ml red wine vinegar
  • 25 g unsalted butter
  • 30 g light brown sugar
  • 50 g raisins or sultanas
  • 1 cinnamon stick
  • 1/2 tsp ground nutmeg
  • 8 cloves
  • 2 star anises
  • 2 bay leaves

Instructions
 

  • Chop the cabbage into quarters and remove the core. Slice into thin strips. Halve the red onion, remove the skin and thinly slice. 
  • Wrap and tie the cinnamon stick, cloves, star anise and bay leaf in some cheese cloth. Place all of the ingredients in a large pan. Cover, bring to a boil, turn the heat down and simmer for 80 minutes
  • Remove the lid, turn up the heat and continue to cook until there is no more liquid. Remove the cheesecloth with the spices and serve.
