Spiced Cider Poached Pears
Winter spices, sweet fruit, rich cream, crunchy crumble, enough said. These pears are a great way to get that fine dining feeling at home and can be made ahead of time.

Ingredients
For the pears
- 4 large pears
- 1.5-2 litres cider
- 1 tbsp ground cinnamon
- 1/2 tbsp ground nutmeg
- 1/2 tbsp ground cloves
For the crumble
- 65 g brown sugar
- 50 g unsalted butter
- 85 g plain flour
- 1 tsp ground cinnamon
For the cream
- 200 g double cream
- 2 tsp vanilla extract
Instructions
- Pour the cider into a large pot and add the spices. Place on a medium heat to slowly bring it to the boil, stirring occasionally to mix in the spices.
- While you’re waiting for the cider to reach boiling point, peel the pears. Once boiling, turn down to a simmer and fully submerge the pears in the liquid. Leave these in, making sure the cider doesn’t boil, for 40 minutes.
- For the crumble, melt the butter and add it to the sugar and cinnamon, mixing until smooth. Then, add the flour and mix until even.
- Next, bake the crumble on a baking tray at 150°C for 20 minutes or until golden and crunchy. Set aside until time to serve.
- A couple of minutes before you serve, whip the cream with the vanilla extract until thick. You can do this with a hand whisk or mechanical whisk.
- To serve, remove the pears from the cider carefully and place onto kitchen paper to remove excess liquid. Serve the pear on top of the crumble and the cream on the side. Enjoy!
