Slow Cooker Beef Stew

Ingredients
- 400 g stewing beef
- 200 g carrots
- 200 g parsnips
- 2 sprigs thyme
- 100 ml red wine
- 1 beef stock cube
- 2 bay leaves
- 1 tsp black pepper
- 1 tbsp soy sauce
- Splash of boiling water
Instructions
- Peel the carrots and parsnips and chop them into large chunks.
- Place all of the ingredients into the slow cooker and cook on low for 5 hours, stirring occasionally.
- Serve with creamy mash and chopped parsley.
Notes
If after 5 hours the stew liquid is thinner than you’d like, remove the lid from the slow cooker, turn to high and continue to cook until it reaches the right thickness.
