Slow Cooker Beef Stew

This easy slow cooker stew will bring you comfort with no effort required, just pop it in the slow cooker and come back 5 hours later!

  • 400 g stewing beef
  • 200 g carrots
  • 200 g parsnips
  • 2 sprigs thyme
  • 100 ml red wine
  • 1 beef stock cube
  • 2 bay leaves
  • 1 tsp black pepper
  • 1 tbsp soy sauce
  • Splash of boiling water


  • Peel the carrots and parsnips and chop them into large chunks.
  • Place all of the ingredients into the slow cooker and cook on low for 5 hours, stirring occasionally.
  • Serve with creamy mash and chopped parsley.


If after 5 hours the stew liquid is thinner than you’d like, remove the lid from the slow cooker, turn to high and continue to cook until it reaches the right thickness.
