Wow, this isn't for the faint-hearted. Packed with flavour from garlic, basil, pistachio nuts and parmesan, this pesto packs a seriously impressive punch.

Ingredients
- 70 g grated parmesan
- 70 g pistachios
- 3 cloves garlic
- 15 g fresh basil
- 120 g olive oil
- 1 tsp ground black pepper
- 0.5 tsp salt
Instructions
- Pulse all of the dry ingredients together in a blender.
- Slowly pour in the oil while mixing until you reach the desired consistency (around 120g).
Notes
Serving suggestion: add to some hot pasta to make a mouth-watering lunch in minutes. Alternatively, this pesto works very well with chicken. Try stuffing a chicken breast with pesto and mozzarella and wrapping it in parma ham before baking.
