Potato Salad With Chives
- 900 g small potatoes
- A handful of chives
- 1 garlic clove
- 1/2 a red onion
- 250 g light mayonnaise
- salt and pepper to taste
- Place the potatoes into a pan of cold water, bring to the boil and simmer until soft.
- Finely chop the chives and red onion, mince the garlic clove and combine with the mayonnaise in a bowl.
- Once cooked, drain the potatoes and allow to cool slightly before halving.
- Add the potato halves to the mayonnaise mixture and add salt and pepper to taste.
