  • 900 g small potatoes
  • A handful of chives
  • 1 garlic clove
  • 1/2 a red onion
  • 250 g light mayonnaise
  • salt and pepper to taste


  • Place the potatoes into a pan of cold water, bring to the boil and simmer until soft.
  • Finely chop the chives and red onion, mince the garlic clove and combine with the mayonnaise in a bowl.
  • Once cooked, drain the potatoes and allow to cool slightly before halving.
  • Add the potato halves to the mayonnaise mixture and add salt and pepper to taste.
