Pineapple Salsa

This fresh, tangy and easy to make salsa is a perfect companion for rich, fatty or salty dishes. Alternatively, just load it up on a plate of cheesy nachos and enjoy!

Ingredients
 
 

  • 250g raw pineapple
  • 1/2 a red onion
  • 1/2 a red bell pepper
  • 1/2 a red chilli
  • A handful of coriander
  • 1/2 a lime (juice only)
  • Pinch of salt and pepper

Instructions
 

  • Peel the onion, remove the core of the pepper and remove the stem and seeds from the chilli. Next, de-core and remove the outer skin from the pineapple, leaving only the juicy flesh.
  • Dice all of the ingredients (apart from the lime) and mix in a bowl before squeezing the lime over the top and serving. Simple!
