  • 285 g drained weight tinned sweetcorn
  • 1.5 limes (juice only)
  • Handful of coriander
  • 2 medium beetroots (precooked)
  • 1 red chilli
  • 1/2 a red onion
  • A pinch of salt and pepper


  • Roughly chop the coriander and dice the beetroots, onion and chilli into small pieces.
  • Drain the corn, squeeze the lime and mix all of the ingredients in a bowl before serving immediately.
