Ingredients
- 285 g drained weight tinned sweetcorn
- 1.5 limes (juice only)
- Handful of coriander
- 2 medium beetroots (precooked)
- 1 red chilli
- 1/2 a red onion
- A pinch of salt and pepper
Instructions
- Roughly chop the coriander and dice the beetroots, onion and chilli into small pieces.
- Drain the corn, squeeze the lime and mix all of the ingredients in a bowl before serving immediately.
