Ingredients
- 100-200 g white baguette or ciabatta
- 250 g tomatoes
- 125 g reduced fat mozarella
- 1 tbsp olive oil
- 5-10 basil leaves
- 2 cloves garlic
- 1 tsp salt and pepper (each)
Instructions
- Finely chop the garlic and basil before mixing with the olive oil, tomatoes (chopped), salt and pepper and torn mozarella. Serve generously on toasted bread.
Notes
There are plenty of ingredients that can help to make your bruschetta more interesting if you’re looking for something more than the classic flavours. Use balsamic vinegar or lemon juice to add acidity, chilli for spice or ricotta for extra creaminess.
