Ingredients
 
 

  • 4 lbs raw pork belly
  • 1.5 tbsp brown sugar
  • 1.5 tbsp paprika
  • 1 tbsp garlic granules
  • 2 tsp salt
  • 2 tsp ground black pepper
  • 6 tbsps your favorite BBQ sauce

Instructions
 

  • Preheat your fan oven to 200°C (400°F).
  • Begin by removing the packaging from the pork belly and patting it dry using kitchen paper.
  • Cut the pork belly into inch-sized cubes, try and make sure you end with even-sized pieces but there's no need to be too exact.
  • In a large bowl, combine all the dry rub ingredients: paprika, brown sugar, garlic granules, salt and black pepper.
  • Add the pork cubes to the bowl and massage the dry rub into the meat, covering every cube as best as possible.
  • Place the pork cubes onto a large baking tray with a high rim in a single layer.
  • Place the baking tray into the preheated oven and roast the pork belly for 1 hour.
  • Once the initial hour is done, carefully remove the pork belly from the oven. Coat the roasted pork belly bites with your favorite BBQ sauce, ensuring they are evenly covered. Dispose of any excess fat that may have accumulated during roasting. Make sure to do this carefully to avoid burning yourself.
  • Place the BBQ sauce-coated pork belly bites back onto the baking tray and return them to the oven for an additional 20 minutes.
  • After the final 20 minutes, take the tray out of the oven again. Serve and enjoy these succulent BBQ Pork Belly Bites.
